Cut the ends off the zucchini and slice in half lengthwise.
Scoop out the pulp from each half of zucchini, leaving the shell.
For filling: in a large pan of boiling water, add the corn over medium heat andcook for about 5-7 minutes.
Drain the corn and set aside to cool.
In a large bowl, add corn, haf of the parmesan cheese, sour cream and hot sauce and mix well.
Spray the zucchini shells with cooking spray evenly.
Place the water tray in the bottom of Breville Panini Press.
Place about 2 cups of lukewarm water into the water tray.
Place the drip pan over water tray and then arrange the heating element.
Now, place the grilling pan over heating element.
Plugin the Breville Panini Press and press the âPowerâ button to turn it on.
Then press âFanâ button.
Set the temperature settings according to manufacturerâs directions.
Cover the grill with lid and let it preheat.
After preheating, remove the lid and grease the grilling pan.
Place the zucchini halves over the grilling pan, flesh side down.
Cover with the lid and cook for about 8-10 minutes.
Remove the zucchini halves from grill.
Spoon filling into each zucchini half evenly and sprinkle with remaining parmesan cheese.
Place the zucchini halves over the grilling pan.
Cover with the lid and cook for about 8 minutes.
Serve hot.
